STEP 1
Finely chop the red onion, bell bell pepper and pickle and set aside. Mix the mayonnaise with honey for a slightly sweet sauce.
STEP 2
Heat a grill pan or barbecue over medium-high heat. Grill the country sausages for about 5-6 minutes until golden brown and cooked through, turning frequently.
STEP 3
Cut the buns open and grill the inside briefly in the pan or on the barbecue for a crispy bite.
STEP 4
Spread the arugula over the sandwiches and top with the grilled country sausage. Top with red onion, pickle and bell bell pepper. Drizzle the honey mayo and mustard on top.
STEP 5
Garnish with fried onions and red pepper for extra spice.
