STEP 1
Preheat the oven to 200°C. Cut the sweet potato into small cubes, the bell pepper into strips, and the onion into thin rings. Mix everything with olive oil, herbs, pepper, and salt, and roast for 20 to 25 minutes until golden brown.
STEP 2
Fry the Crispy Drumz until crunchy according to the package instructions.
STEP 3
Mix the plant-based yoghurt, mustard, lemon juice, salt, and pepper for the dressing.
STEP 4
Add the roasted vegetables to the lettuce and place the Crispy Drumz on top. Serve with the dressing.
Tips:
- For a more filling meal, add quinoa or couscous.
- For extra crunch, add nuts or seeds.
- For a touch of freshness, finish with extra lemon juice or herbs like coriander.
