Greenway meatloaf with mashed potatoes and cherries

INGREDIENTS

1 onion
Fresh parsley
½ dl olive oil or soy butter
1 jar of cherries
200 g mixed young lettuce
Mashed potatoes

Veggie loaf with mashed potatoes and cherries

Preheat the oven to 170 °C.

STEP 1

Chop the onion and mix it with the mince, parsley and some salt and pepper. Knead into a loaf.

STEP 2

Grease a baking dish with some soy butter or olive oil and place your veggie loaf in the dish. Pour some olive oil or (melted) soy butter on top.

STEP 3

Bake for 25 minutes at 170 °C. Serve with mashed potatoes, hot or cold cherries and a mixed salad.
