Greenway meatballs in tomato sauce

INGREDIENTS

1 fennel tuber
100 g carrots
100 g zucchini
1 kg tomato pieces
100 g onion
10 g garlic puree
20 g vegetable bouillon
Rosemary and thyme
Cooking oil, soy butter or olive oil
Pepper and salt
Mashed potatoes

Veggie balls in tomato sauce

STEP 1

Finely chop the onions and dice the carrots, zucchini and fennel (brunoise).

STEP 2

Heat in the cooking oil and stew all the vegetables together with the tomato pieces, bouillon and spices. Let simmer for about ten minutes over low heat with a lid.

STEP 3

Add the Greenway Veggie Balls to the sauce. Continue to simmer on low heat for another 10 minutes.

STEP 4

Season to taste with salt and pepper. Serve with mashed potatoes.
