Ingredients

  • 4 tortilla wraps
  • 2 packets Greenway Falafel spinazie (available for purchase at Colruyt)
  • 1 pomegranate
  • 300g young spinach leaves
  • 1 red and 1 green chili pepper
  • 1 red onion
  • 1 yellow bell pepper
  • 1 zucchini
  • 100ml yogurt or a plant-based yogurt alternative
  • 50g mayo or vegan mayo
  • 20g of fresh mint
  • Pepper and salt

Wraps with falafel and spinach

STEP 1

Slice the red onion, yellow bell pepper, zucchini, and chili peppers into thin strips. Remove the seeds from the pomegranate. You can easily do this by cutting the pomegranate in half and tapping the back with a spoon. This will release the seeds nicely!

STEP 2

Mix the yogurt with the mayo and finely chopped fresh mint. Season with some pepper and salt to taste.

STEP 3

You can easily reheat the falafels in a hot air oven or air fryer. You can also crisp them up in a pan with some cooking oil or deep-fry them.

STEP 4

Serve the ingredients on the wrap and serve with the yogurt-mayo dip. Enjoy!
