winter salad

INGREDIENTS

1 red bell bell pepper, in strips
1 handful of broccolini
½ pumpkin or bottle pumpkin, in slices
1 red onion, in rings
2 hands of arugula
1 handful of mixed nuts (walnuts, cashews, hazelnuts)
1 lemon wedge
Olive oil, salt & pepper
Dressing of your choice

Winter salad with Cheezzy bites

15 minutes

2 servings

STEP 1

Heat oven to 200 °C. Place squash, bell bell pepper and broccolini on a baking sheet. Drizzle with olive oil, pepper and salt. Roast for 20 min.

STEP 2

Bake the bites in the oven, air fryer or deep fryer according to the package until golden brown and crispy.

STEP 3

Mix arugula with red onion, roasted vegetables and nuts

STEP 4

Drizzle the dressing over the salad, top with the Cheezzy Bites, and serve with a wedge of lemon.
