Just like 'chicken curry' with rice

Cook the rice according to the directions on the package.


Fry the fillet pieces over medium heat until crispy in fat and set aside.


Take a wok pan or cooking pot with a lid and put fat in it. Add the pineapple, leek, broccoli florets and bell pepper and stir fry briefly. Now add water and coconut milk and season to taste with curry powder and vegetable stock powder. Put the lid on the pot and continue to stew the vegetables until they are al dente. Now add the roux and stir until the sauce has thickened. Finally, mix in the fried fillet pieces and, if necessary, season with salt and pepper.


Sprinkle the 'Just like chicken curry' with chopped spring onion and possibly chopped coriander and serve with the rice.
