vol au vent with Greenway Filet pieces "Just like chicken" and greenway balls

INGREDIENTS

1.5 kg Greenway Filet pieces "Just like chicken" (vegan)
2 kg brown mushrooms
1.25 kg of forest mushroom mix (Ardo)
2 kg of salsify pieces
5 l of soy cream
300 g roux or 150 g cornstarch
50 g mushroom stock
30 g truffle oil
250 g soy butter
Parsley
Pepper and salt

STEP 1

Sauté the mushrooms and salsify in soy butter.

STEP 2

Add in the soy cream, mushroom stock and truffle oil.

STEP 3

Add the Chicken pieces and cook together.

STEP 4

Thicken the sauce with roux or cornstarch. Season with salt and pepper and serve with chopped parsley.
