Greenway meatballs in tomato sauce

INGREDIENTS

1 fennel tuber
100 g carrots
100 g zucchini
1 kg tomato pieces
100 g onion
10 g garlic puree
20 g vegetable broth
rosemary and thyme
fat such as soy butter or olive oil
Pepper and salt
Mashed potatoes

Meatballs in tomato sauce

STEP 1

Finely chop the onions and brunoise (dice) the carrots, zucchini and fennel.

STEP 2

Heat in the fat and stew all the vegetables together with the tomato pieces, broth and spices. Let simmer for about ten minutes over low heat with a lid.

STEP 3

Add the Greenway meatballs to the sauce. Continue to simmer on low heat for another 10 minutes.

STEP 4

Season to taste with salt and pepper. Serve with mashed potatoes.
