flatbread strips just like chicken lanières

INGREDIENTS

2 large flatbreads or naan breads
1 red onion, in rings
handful of arugula lettuce
a few cherry tomatoes, halved
fresh mint, pepper and salt
100 g vegetable yogurt
1 tbsp lime juice + lime wedges for finishing
1/2 clove of garlic (optional)

STEP 1

Mix the vegetable yogurt with the lime juice, garlic (if desired), pepper and salt. Set aside refrigerated.

STEP 2

Heat a little olive oil in a pan. Fry the Greenway strips just like chicke until golden brown and slightly crispy according to the instructions on the package (about 3 minutes).

STEP 3

Heat the flatbread briefly in a dry pan or oven. Spread with a layer of the yogurt sauce. Spread arugula on top, followed by the fried Greenway strips. Add the red onion, cherry tomatoes and some fresh mint, if desired. Drizzle with additional yogurt sauce and finish with some black pepper.
