INGREDIENTS

2 tablespoons of olive oil
1 head of romaine lettuce
1 red onion
200 g cherry tomatoes
12 pieces of semi-sun-dried tomatoes
80 g pitted olives
100 g grated Parmesan cheese
Salt and pepper
1 teaspoon of Provencal herbs
4 slices of bread
Dash of olive oil to fry bread croutons
100 g mayonnaise or vegan mayo
30 ml of water
1 clove of garlic
1 lime
20 g capers

Caesar Salad

STEP 1

In a frying pan with some olive oil, fry the "Just like Chicken" fillet chunks for about 5 minutes over medium-high heat and season with salt, pepper and Provencal herbs. Set aside.

STEP 2

Slice the bread slices and fry these bread croutons in a dash of olive oil and set aside.

STEP 3

Cut the romaine lettuce into coarse pieces, wash them well and dry in a salad spinner. Thinly slice the red onion and quarter the cherry tomatoes.

STEP 4

In a large salad bowl, mix together the lettuce, red onion, cherry tomatoes, half-sun-dried tomatoes and the olives. Also mix in the fried fillet pieces and croutons.

STEP 5

Using a hand blender, blend the dressing ingredients in a measuring cup to make a creamy salad sauce. Finally, stir the sauce into the salad and top with the Parmesan cheese.
