8 kg sweet potatoes
1 kg red beans
1 kg mango
400 g avocado
200 g goat cheese
50 g chillies
80 g salsa mexicana
2 l soya cuisine
100 g butter
50 g Spicemix del Mondo guadalajara (Verstegen)
50 g lemon
20 g pepper
20 g salt
20 ml olive oil
20 g curly lettuce

STEP 1

Sauté the Gyros along with the red beans and the salsa mexicana. Season with the chili peppers and spice mix.

STEP 2

Dice the mango and goat cheese. Crush the avocado into guacamole and season with lemon, salt and pepper

STEP 3

Bake the sweet potatoes for an hour at 180 °C.

STEP 4

Cut the sweet potato in half and remove some of the flesh.

STEP 5

Dress the soy cuisine on a plate, spread some herbs and mango on top.

STEP 6

Place the halved sweet potato on the plate and fill with the Gyros.

STEP 7

Also spread the goat cheese over the sweet potato and color with a blowtorch.

STEP 8

Top with mango, curly lettuce and tufts of guacamole.
