STEP 1
We start by preparing the vegetables. Cut the onion, carrots, zucchini, peppers and celery all into small cubes. Depending on your preference, you can do this very finely or more coarsely. Also finely chop the garlic.

Now take a saucepan, put on medium heat with the olive oil and put in the sliced vegetables. Put the lid on the saucepan and stew the vegetables for 10 to 15 minutes until tender. Stir occasionally so they don't burn. If necessary, add a splash of water if you notice they are starting to brown anyway.
STEP 3
When the vegetables are tender, add the bay leaf, stock, spaghetti seasoning, diced tomatoes, tomato paste and the coriander seed. Stir well and turn the heat down to low. Now let the sauce continue to simmer for 15 minutes while stirring occasionally so that it thickens nicely and all the flavors are well released.
STEP 4
Finally, fry the minced meat in a little fat and add to the sauce. Serve with spaghetti!
