250 ml of milk
120 g flour
2 teaspoons cornstarch
1 clove of garlic
pinch of cayenne pepper to taste
Salt and pepper
200 g panko
1 cauliflower
200 g BBQ sauce
spring onion, for decoration

STEP 1

Preheat the oven to 220°C.

STEP 2

In a bowl, mix the milk with the flour, cornstarch, very finely chopped garlic and cayenne pepper and season with salt and pepper. Whisk this well for a moment so that you get a smooth batter with no lumps.

STEP 3

Put the panko in a bowl and season with some salt and pepper.

STEP 4

Divide the cauliflower into small florets. Dip the cauliflower florets in the batter, then roll them through the panko until they are completely coated with it.

STEP 5

Place the florets on a baking tray lined with baking paper, place the tray in the preheated oven and bake for about 25 minutes until golden brown and crispy.

STEP 6

Remove the cauliflower florets from the oven and mix them through the BBQ sauce so that the sauce is evenly distributed over the crispy florets. Bake them in the oven for an additional 10 minutes. Serve with some chopped spring onion.
