Ingredients

  • Garlic
  • Vegetable cooking butter or olive oil
  • 5 kg Shredded wok vegetables (carrot, leek, Chinese cabbage, pepper, mangetout,...)
  • 4 kg Weighted udon noodles
  • Teriyaki sauce
  • Soy sauce
  • Crispy chilli oil
  • Water
  • 2 kg Greenway finely chopped
  • Finely chopped chilli peppers and fried onions (for decoration)

Chinese 'crispy chilli' udon noodles

STEP 1

Chop the garlic finely.

STEP 2

Heat the fat in a wok pan. Add the vegetables and wok them for a few minutes. Add in the garlic and mix well.

STEP 3

Now add the noodles and pour over the teriyaki sauce, soy sauce, crispy chilli oil and water. Turn down the heat slightly and stir gently, so that the noodles are nicely mixed through the vegetables and sauce and everything cooks evenly.

STEP 4

Finally, add in the minced meat. Briefly stir-fry and you're ready to go.

Step 5

Decorate the dish with chopped peppers and some fried onions.
